Photo (26)We make this smoothie almost every morning, have been for over a year now, it just seems to make the day go better. This time of year I use frozen berries and kale from Costco, but can’t wait to buy them when they are fresh and local.

1 c blueberries

1 c strawberries

½ orange

1 c chopped kale

2-3 c fresh spinach

¼ of one fresh beet

1 in sliver of ginger

1 scoop Whey Protein powder (sweetened with Stevia)

2-3 c almond milk

Combine all ingredients in a high powered blender (we use a Vita Mix) and blend for a full minute. Drink immediately for best nutrition, vitamins and minerals start to break down quickly. Makes approximately 40 oz. so in our house that is two large servings for breakfast.

  1. Beets??? Oh no. Have you tried pickled beets? I can tolerate pickled beets but I can’t add it with a smoothies. Keep sharing recipes please 🙂 This South Carolina girl likes trying new things!

  2. I had a hard time trying beets at first, but it turns out they are one of the sweetest vegetables, so they sweeten the smoothie naturally! I didn’t realize you’re southern, I’m originally from Alabama, and love southern food! Hard to make it healthy, though…
