One of my favorite things about this time of year is the abundance of tomatoes, which means it is time to make the sauce! I get to pull out my Mamaw’s food processor from 1974 (seriously) and pulverize hundreds of tomatoes with onions, garlic, balsamic vinegar and fresh herbs. It cooks down for a couple of hours and then I freeze it for fresh sauce throughout the year.
I don’t can or freeze a lot of things, so this project makes me feel like I am preserving something more than just sauce; I am doing what my grandmother and so many before her did by providing a delicious and healthy meal to my family. It makes me so happy because I know exactly what I am feeding my family and my kitchen smells wonderful….
