This has been a family favorite for about twenty years now. It comes from an old friend who cooks better then most anyone. It’s as much of a dessert as it is a side dish, check the sugar amount, but when you pair it with ham, you can now justify serving ham as a main dish.
Pineapple Souffle
1 c butter, softened
2 c sugar (I reduce this some)
4 eggs
1/4 c milk
6 slices fresh bread crumbs
1 can crushed pineapple, drained
Cream the first three ingredients. fold in the bread crumbs and add the pineapple.
Pour into a 2 qt. dish and bake 350 degrees for up to an hour. Serves 8.
