Black Bean Tacos with Feta

tacosWe are trying to incorporate more vegetarian main dishes into the rotation, and this recipe has been in my book for years. I have made it a handful of times, but this time it was a big hit. I have no memory of where it came from, so if it’s familiar to you, let me know!

Black Bean Tacos with Feta

15 oz black beans, drained

1/2 t cumin

5 t olive oil, divided

1 T fresh lime juice

2 c bagged coleslaw mix

2 green onions, chopped

1/3 c fresh cilantro, chopped

4 corn tortillas

1/3 c crumbled feta

salsa, hot sauce, guacamole

Place beans and cumin in a small saucepan and heat on low, partially mashing the beans. Mix 2t olive oil nd lime juice in a medium bowl and add the coleslaw, green onions and cilantro. Toss to coat and season with salt and pepper.

Heat 3t olive oil in a skillet and place the tortillas on heat in a single layer. Spoon 1/4  bean mixture onto half of the tortilla, then 1/4 of the coleslaw mix and top with feta. Fold over on the heat and serve with salsa, hot sauce and guacamole.
