We had a dinner party last night and one of the guests loves to cook, so I asked him for a side dish recipe that I could serve with dinner, and he suggested this orzo dish with cream, fresh roasted corn and greens. It was delicious.
Creamy Orzotto
3/4 c dry orzo pasta
2 garlic cloves, minced
2 T butter
4 c collard greens or kale, stemmed and chopped (I used half kale, half spinach)
2 c fresh corn (I roasted 3 ears )
2/3 c heavy cream
1/4 c parmesan
salt and pepper to taste
Cook orzo according to package directions, drain and set aside. Saute garlic in butter in a saucepan over medium high heat for one minute. Add the greens and corn and cook for three minutes, stirring frequently. Stir in the remaining ingredients, including the orzo. Simmer until heated through, stirring occasionally.
*I doubled the recipe to serve 20 guests and there was just enough leftover for me to eat it for breakfast!
**I put this together an hour ahead of time and left it on low heat until serving, adding a little more cream over time, and it was still the right consistency.
