I made these a week or two ago when friends were visiting. It says you need to wait an hour for them to cool in the pan, but the six or seven of us ate the entire pan within minutes of them coming out of the oven! If you wait, they become crispy like the ones you buy in a box and if you eat them fresh out of the oven they are chewy, more like cookies. Either way,, they are quick and easy and everybody loves them.
Gluten Free “Granola” Bars
1/2 c butter
1/3 c sugar
1/3 c honey
1/4 c flour (I use almond meal for gluten free)
1/2 t vanilla
1/4 t cinnamon
2 c crisp rice cereal
2 c rolled oats (I use organic)
1/2 – 1 c dried fruit or mini chocolate chips
1/2 c sliced almonds, optional
Set the oven to 350 degrees. Spray a 9×13 pan with cooking spray. Melt the butter and then add all other ingredients to the butter. Pat into the pan and bake for 20 minutes. Allow to cool for 1 hour. Makes 16-24 bars.
Just a quick thought: can you omit the flour altogether? I own a company that makes oodles and oodles of granola bars (organic, gluten-free, and vegan), and we’ve never used flour. I’ll bet it’d work. 😊
