My friend Kristy and I discovered this pizza at Mellow Mushroom somewhere in Georgia a few years ago. She loves caesar salads and I like anything different, so we had to try it. Apparently it is not available at all Mellow Mushrooms, only those who have met certain quotas and such. It doesn’t matter to me, because I make it at home, especially this time of year.
Chicken Caesar Pizza
Boboli pizza crust (or whatever brand you like)
2 T olive oil
2 cloves garlic, pressed
2 cups cooked chicken (Marinated in pesto)
1 c provolone, grated
1 c mozzarella, grated
1/2 c feta
1 bag caesar salad (minus the croutons)
2 Roma tomatoes
2 t parmesan cheese
Spread olive oil and garlic all over the pizza crust. Sprinkle chicken and cheeses over the crust. Bake 450 degrees for 8-9 minutes. Mix the caesar salad and top pizza with it. Add tomatoes and parmesan.
