My friend asked me to post this recipe, it’s a staple in our house to the point that I’ve never really seen it written down. Because of the bite of vinegar and the sweet of sugar, it’s a dish that people either love or really don’t. There is nothing healthy about this dish except for the comfort it provides to the soul!
Southern Green Beans
1/2 lb. bacon, cut into small pieces (I use scissors)
1 sweet onion, chopped
3 cans cut Green Beans, drained
1/3 c sugar
1/3 c vinegar (white or apple cider works)
salt & pepper
Cook the bacon and onions in a skillet till done. Pour green beans, sugar and vinegar into a saucepan and add two cans worth of water, or enough to cover the beans and begin cooking on medium heat. When it has cooled down a bit, add the bacon and onion mixture along with about two teaspoons of the grease from the bacon. Turn the heat down to low and cook for as long as you can, I aim for 4-6 hours. Stir every hour and add water as needed, probably 1-2 cups total. Salt and pepper as desired.
