Vietnamese Beef Stew (Banh mi bo kho)

Have you heard of Tasting Table? It’s a culinary website that sends me recipes from chefs everyday. This one came from a new James Beard Award winner at a Houston restaurant called Underbelly.

I know….it’s a high of 93 degrees today but this is something to try, no matter the temperature outside. I found the recipe yesterday and made it yesterday. Took 20 minutes or so, then it needs time to simmer.

I bought all new ingredients to make sure everything was fresh and I added a couple of handfuls of kale at the end for extra nutrition. Photo (36)

We have plans every night this week for dinner, so it should be good and hot by the time we get to sit down as a family!
