I got this recipe from an old friend at least fourteen years ago and I still make it year round. Minestrone is a very forgiving soup, meaning that you can add or take away ingredients and it still holds it’s integrity. I like to add black beans, mushrooms and kale to kick up the nutritional value. I don’t bother with pasta, it really doesn’t need it.
Minestrone
1 lb. sausage (I use hot Italian)
2 c. celery, chopped
1 c. onions, chopped
6 c. zucchini, sliced
28 oz. chopped tomatoes
1/2 c. green onions
1 1/2 t. Italian seasoning
1 1/2 t. salt
1 t. oregano
1 t. sugar
1/2 t. basil
1/4 t. garlic
Brown the sausage and saute the celery and onions. Add all other ingredients and bring to a boil, reduce to simmer for minimum 20 minutes. Top with shaved parmesan.

Yes, try it! Add beans and spinach for more protein, and maybe vegetable broth for more liquid. Would love to hear what you think of it.
