Hearty Minestrone

minestroneI got this recipe from an old friend at least fourteen years ago and I still make it year round. Minestrone is a very forgiving soup, meaning that you can add or take away ingredients and it still holds it’s integrity. I like to add black beans, mushrooms and kale to kick up the nutritional value. I don’t bother with pasta, it really doesn’t need it.

Minestrone

1 lb. sausage (I use hot Italian)

2 c. celery, chopped

1 c. onions, chopped

6 c. zucchini, sliced

28 oz. chopped tomatoes

1/2 c. green onions

1 1/2 t. Italian seasoning

1 1/2 t. salt

1 t. oregano

1 t. sugar

1/2 t. basil

1/4 t. garlic

Brown the sausage and saute the celery and onions. Add all other ingredients and bring to a boil, reduce to simmer for minimum 20 minutes. Top with shaved parmesan.
