My friend brought this dish over for dinner last week and I keep thinking about it. I love the simplicity of the recipe, but the number of steps makes it really special, and the fact that she took the time to make this for us is so kind. Chicken Picatta 2 lbs chicken breasts, pounded... Continue Reading →
In The Woods
This past Fall, our church asked for its members to respond to a need in the community, there had been a devastating flood in our area more than a year before, and a lower income area of town was having a terrible time healing on their own. We were asked to volunteer to clear some... Continue Reading →
An Update
It's Friday, I am four days post surgery and starting to feel human again. About a month ago I was diagnosed with breast cancer and am now recovering from major surgery to remove the tumor. What a ride this has been! The surgeon called yesterday with the pathology report and there was no cancer in... Continue Reading →
We’re Going on a Bear Hunt
Our grandson hurled a new book at me one day last week and sat down hard in my lap, his way of saying, "Read to me!". I think reading to children is always kind of magical, everyone sits close to see the pictures and no one gets into trouble, and there's always a happy ending.... Continue Reading →
Thai Coconut Veggie Curry
I have made this five or six times now and it never disappoints, even if I do. One time I forgot the coconut milk, another I left off the tofu. I have used homemade vegan 'fish sauce' or the bottled kind, doesn't matter. Delicious. It looks like a lot of ingredients, but this comes together... Continue Reading →
2019 Reading List
This year I became a grandmother, so the genre of some of the books I read is changing. I read a couple of books about caring for a new Mom, and they are listed here, as well as fewer books than normal. Turns out I'd rather hold a baby than read a book! These are... Continue Reading →
Winter Salad
This is my new favorite food for the season, a combination of so many flavors and it gets better every day, marination in your fridge! It is a beautiful salad filled with color that I hoard for myself when possible, eating it bit by bit. I got caught finishing it off last night at bedtime.... Continue Reading →

For some reason, it is the time of day when the kids are at their absolute worst, more tantrums are thrown and messes made in this short span of time than the whole rest of the day. It’s also when you are trying to get dinner started and transition into the evening hours.
When I was in the middle of this chaos (and it lasted for years) I found something that worked really well to keep us on an even keel. We put on a show. Most every single day. Everybody had to put on a costume or something very beautiful and special. Buzz Lightyear, Spider Man, Pocahontas and many, many of her princess friends came to our shows. The players would then sell tickets, sometimes made…

Lay It Down
In the early years of our marriage I had the ability to run a gamut of emotions in the first hour of the day; my guy never knew what to expect because I could show signs of bitterness and frustration and enthusiasm and charm without thinking about it. I believed it was my right to do this,... Continue Reading →
Apple Crisp with Salted Caramel Ice Cream
I was visiting our daughter, son in law and new grandson and they had two big bags of freshly picked apples. I had to make something with them, so I found a tasty Apple Crisp recipe from FoodNetwork.com and tweaked it just a bit for the vegan family I was feeding. The hardest part is... Continue Reading →
